Citrus Chia Seed Protein Muffins

Now this is a very very very belated blog post (sorry girls!) which we promised about a month ago, following from our ultimate girly Saturday night of baking, pizza and movies. We decided to whip up a batch of semi-healthy cupcakes and ended up deciding on this take on the Starbucks lemon and poppy seed muffins (if you haven’t tried them then who r u really). Anyhow, here is the recipe, give it a go and let us know how it tasted!


For the Muffins:

30g Multipower Lemon Curd Casein Protein (2.5 Scoops)

Sukrin Cake Mix

1 tbsp Goodyfull Chia Seeds

3 Eggs

150ml water

75g Coconut Oil

Zest of 1/2 an orange

1 tsp orange essence

For the frosting:

250g Skyr Yoghurt

30g Multipower Lemon Curd Casein Protein

75g Sukrin Zero Kcal Icing Sugar (this stuff is a serious life hack. Calorie free icing sugar, no word of a lie!)

1 tbsp Goodyfull Chia Seeds


1)      Make the Sukrin cake mix according to the instructions (adding water, egg,, coconut oil). Alternatively, you can just use a basic cupcake mix for this part but it will be higher in Kcals.

2)      Add the Multipower Lemon Curd protein, Chia seeds, Orange Essence and Zest and mix together. Pour into muffin cases in equal amounts and bake for 20 mins.

3)      While the cupcakes are baking, add the yoghurt to the chia seeds, Multipower Lemon Curd Casein protein and Sukrin Zero Kcal Icing Sugar)

4)      Remove the cupcakes from the oven and leave to cool.

5)      Smother in the frosting once completely cooled and leave for 5-10 mins to set.

6)      Enjoy!!!
